When visiting Zamboanga, a traveler’s first tour
in the morning is to visit a satti
house for breakfast. Satti is the
spicy dish popular among locals of Zamboanga. It is the food that perks up your
morning. Satti is served with sticky rice uniquely cooked in a wooven coconut
leaf to create its square-like shape, and sticks of grilled beef and chicken meat swimming in the thick, spicy and hot sauce. It is the
sauce that makes all the difference giving it the special taste. Zamboangueños claim that your Zamboanga trip
is never complete without this food. From
the wisdom of the old (my dad) who had been eating satti most of his mornings: find a satti house operated by a Chinese because they make tasteful sauce
distinct from the rest.
The unique flavor of this food
is what makes many Chavacanos (people of Zamboanga) miss their home. Mornings
in Zamboanga for many joggers, students and office workers begin at a satti house. It has become the comfort
food for many because of its rich texture and spicy flavor that gives a calming
sensation. This is one food that can make your heart a beat faster and
sweat glands get to work.
A serving of satti is
a complete meal. It’s a great starter for the day. To make the sauce, several spices are blended
altogether: dulaw (turmeric), sambal,curry, lemon grass, native pepper,
red cayenne pepper, garlic, cumin, coriander, chili, onions and salt. These
ingredients are pounded until texture becomes powdery. To refine and thicken
the sauce, cornstarch is added and stirred continuously until you achieve the
desired consistency. You can use tomatoes, soy sauce, and peanuts optionally to
tame the zesty flavor. We have never tried cooking satti at home; but I wish to
share the recipe I found from a Facebook Page by a Zamboangueño:

How
to make SAMBAL (Soup). This is for a 7 - 8 quart pot
Ingredients:
1.
- Siling labuyo
(Catumbal) 1/4 cup ( 1/2
- 1 cup if you want it
“hotter”) or Habanero Chilli
pepper 8 peppers (12 - 15 if
you want fire)

Ginger
5 thump
size
3.
- Turmeric
(azafran) 4 thump
size
4.
-
Onions 1 Bulb (fist size)
5.
- Oregano
6 leaves (or 1 teasespoon if power is used)
6.
- Oil
7.
- Shrimp paste
(Bagon) ¼ -1/2 tsp
8.
-
Tomato 1
9. - Flour 1/2 cup +
10. - Corn
Starch 1/2 cup +
11. - Sugar
1 1/2 cu
12. -
Salt 1 tbsp
13. - Anito Power
(Achuete) 15g (2 packs)
14. - Knorr Cube
(Chicken) 3 - 4 cubes
15. - Coconut milk
(gata)* ¼ cup or les
16. – Peanut
butter 1 tsp
17. – Curry Power ½ - 1 tsp (optional)
18. -- Taro Root
(tumon)* small size
(about 2 inches in diameter)
*Procedure:
Step
1: Boil 6 quarts of water. Add the taro root(if you have some). Add ingredients
14, 15, and 17. When boiling, stir,
Step
2: Mince and Blend ingredients 1 to 5 (add small amount of water just enough to
start the blend)
Step 3: Mix ingredients 9, 10, 11, 12, and 13. Add 1 cup(
or more) of water, stir until free of
lumps.
Step
4: Sauté (Gisa) shrimp paste and tomato with oil then add the mixed ingredients
1 to 5 (Sauté until partly dried)
Step
5: Pour the sauté into the boiling water, stir, then add coconut
milk(optional). Add the mix from step 3. add water to reach desired thickness.
Keep
in medium flame for 15 - 30 minutes (or more) with frequent stirring to avoid
"stickings" on the pot. Add water to lessen the thickness of the soup
– if you prefer it that way.
Cool
down for 2 minutes then serve. Enjoy
You
can refrigerate it or freeze for later use. Microwave every bowl for 3-4 minutes. Stir in between heating. Just a tip, stove/fire heating the sambal
seems to be better than microwaving. Just dub the pot with oil before pouring the
sambal. Stir occasionally while heating.
How to Prepare the Beef or Chicken
on sticks :

Marinate with calamansi, salt, sugar and achuete

Brush with coconut milk (optional)
PUSO’:
The Rice (since coconut leave is hard to find here in the US, just cook it in a
rice cooker with less water - just enough to cook the rice.
The author added a note that
the recipe he shared including all measurements were based from his personal preference
of taste. I just shared the ingredients and steps to prepare and cook satti ala Zamboangueño style. You can play with the taste by experimenting a
little bit with the basic measurements and procedures. I have never tried this
recipe at home so for those who will try this, I’d be happy to hear about your
feedback.

2. Meet the largest birds of prey in the country

Davao is home of the Philippine Monkey-Eating Eagle, considered as one of the biggest raptor in the world. This bird is already on the list of endangered species due to human intervention of it's natural habitat. But no need to worry, these mighty eagles have a high success rate in breeding captivity. Which could mean our future generation will still able to see this iconic birds.
You can get closer to them at the Phil Eagle Center in Malagos, Calinan, Davao City.
3. Get close with mother nature at Eden Nature Park Resort
A lush rain forest with spectacular views of Pine Trees, Cool climate where fresh air is guaranteed. This man made 80 hectare resort is been heavily visited among tourist and one should book and inquire prior visiting this nature paradise.

4. Rolling on the hill inside an Orb at Davao Zorb Park
Zorb rolling is one of extreme adventure that you might one to try when visiting Davao. Though the location is not commuter friendly but it's reachable by hiring a cab to Davao Zorb Park along Diversion Road in Maa, Davao City.

You'll get inside to air cushioned ball, lock up then push down slope for seconds of ultimate ride. This might not for everyone but for sure, adrenaline junkies and adventure seekers will love this.
5. Feast on bounty fresh fruit harvest
Davao is famous for it's sweet Pomelos, sweet-tangy mangoesteen and the notorious king of fruits, Durian. Aside from it's fresh and on top quality, these fruits can be bought on cheap price during it's peak season and during Kadayawan Festival. Pasalubong anyone?

Panglao Island, located in the Bohol, is one of the popular tourist destination in the Philippines. The island is famous for its white sand beaches, world-class diving sites and snorkeling. Panglao beaches attracts both local Filipino's and foreign visitors. There are many resorts,hotels and rental cottages and other amenities along the beaches for a worry free vacation at a very affordable prices.
Among the top Panglao beaches are :
1. Alona Beach. It is well known for its amazing white beach and crystal clear water, the place is crowded during high season so if you want some piece and quiet time, you better avoid this season. If you want to spend some peace and quiet, the best time to visit there is during off season.
2. Bagobo Beach. The beach has a very beautiful fine white sand, tall coconut palm trees and crystal clear water perfect for divers and snorkelers. It is also a perfect place to relax, reflect, unwind.and to bond with friends.
3. Bolod Beach. The public beach is a common destinations for local. Nipa huts, cottages, tents and tables can be rented for a minimal fee/day and additional fee for electric consumption. The beach also provides a big charcoal pit for grilling or you can order from a nearby grill hut or bring your own food.
4. Danao Beach. The beach being a recognized dive spots is has first class hotels offering comfortable quarters, amenities and services have been put up here to cater for a lot of visitors from Bohol Sea Resort, Kalipayan Beach Resort, Bita-ug Beach Resort and Alumbung Resort.
5. Doljo Beach. The beach known for its beautiful and exquisite seashells, a favorite hang-out of local folks. Some locals have put up native huts to rent them out to the picnickers. Private owners have put up native huts, cottages and seats to rent them out to the visitors.
6. Momo Beach. This beach is still under develop and not so popular with the locals. There are no resorts and rented cottages and restaurant yet so be better prepared when you visit here. Near the beach is a 40m deep diving site popular for visitors.
There is a lot of breathtaking beaches and resort places in the Visayan region to explore. You can get there by air and land. There are airline companies that offers airfare promos throughout the year, which you can avail for a discounted price.
Bohol
Bohol, is the most popular tourist destination in the Philippines. I turned down several offers to work abroad and decided to put my degree in practice as environmental specialist in Mindanao and ended up very very poor. I love the perceived ugliest living creatures either plants or animals. Keeping in touch with wild birds and snakes and any carnivorous plants seen in the forest keeps me alive. A beach lover, but never lasts in the water for more than five minutes.
How did he get into blogging?
I was so lonely working in the most secluded community with the most beautiful preserved natural environment in Surigao del Sur. There are no other means of entertainment other than rowing a boat to the river and singing in a cheap videoke bar. So, with nothing much to do, I hit the net and activated my blogger account and started sharing my unique travel experiences purposely as an advocacy for uplifting the negative impression about Mindanao.
What do you find to be your biggest struggle as a blogger?
Communication. It sounded so odd, but, I am really having a hard time to convey what I really wanted to tell to my readers. Since my blog is a form of an advocacy, I wanted to make them feel what I actually felt in a particular place, people or culture I am featuring. I am not a professional writer and the only reason I am able to write is when I am deeply inspired emotionally and things just flow naturally.
What is the inspiration behind his blog and how long has it been around?
It started just last June 2012 when I got myself hooked into sharing my travel experiences through blog. But what really inspired me to write was when I saw the Manobo Children of Inadan of San Miguel Surigao del Sur, who live in the most serene and beautiful mountain place, but left with little hope to finish their education due to extreme poverty. It was an ironic situation that the place is rich with beautiful natural resources yet the community dwells deep into poverty. And with nothing else to do during that night I wrote everything I can remember especially my encounters with the indigenous community, hoping someone would pick it up and start to trigger a fire of hope for these people.
What is his favorite blog post and why?
So far, my favorite blog post would be my Tawi Tawi Series. It changed everything about my perception about our Muslim brothers and sisters and the whole ARMM and the freedom they are fighting for. Learning it first hand with the people of Tawi Tawi is far different from what is being shown in the media. I have seen the truth, the sincerity and hospitality of the original dwellers of Mindanao. My jaunt in this part of the country is a ‘nirvana’ to which I could really vouch for all Filipinos that just like anybody else, the people of Mindanao only seek peace and want to live in prosperity. For me it is the happiest place where I experienced true freedom away from the norms of our current society. I could just walk on the roads of almost 100% friendly Muslim populated barangays and some are even “kikay”. I can even wander alone in the farthest country side and run and lie down in their deserted airport’s airstrip- unharmed!
Where do you see your blog(s) and yourself in 5 years?
I am not aiming my blog to become a household name in the future but hoping it serves as a reference and triggers our fellow Filipinos and even the outsiders to extend their assistance to our brothers and sisters in Mindanao instead of avoiding them. I just hope that my message be received by everyone about the unspoken truth. It maybe not in my lifetime but still my hope flares high that my advocacy will have its fruit in due time.
I’d like to set this blog as an inspiration, saying that I can do more and be a productive citizen of my country. So, if I can do blogging and it inspires others, it means I can also do other things beyond my limitation in the coming years. We just have to wait and see what the future have prepared for us.
How does blogging help you, in terms of life and career?
Financially, I am not going to depend on it. But this platform introduced me to a wider audience that enhanced my personality to be more open. Blogging is like a diesel fuel which slowly triggers to develop my personality positively and continues pushing me off to my limits. I have now a wider audience that connects to my passion and giving more inspiration to continue on what I am doing right now. Blogging may have brought me a checkered life and career but at least I don’t adhere to the expensive norms of our society. Carpe diem!

If you are a foreigner who wanted to visit and spend some time in Philippines for great summer getaway experience or a local who just wanted to cool down the heat of summer, then this article is greatly helpful for you. In here, you will find my list of Philippine's top summer destination for you to check out. Here it is.
Boracay
One of the busiest places or resorts in the Philippines when summer time hits. The white powder like sand of Boracay along with its deep blue water and scenic view is what makes locals and tourist flock their way into this place. Just like Baguio, this place can be pretty much become crowded during summer and even holidays.
Palawan
Palawan isalnd is the perfect place to spend a vacation. If you want to get away from the busy city life, you don't want to moss this beautiful small piece of heaven. Located in the province are two of the UNESCO World Heritage Sites, Tubbataha Reef National Marine Park and the Puerto Prinsesa Subterranean River known in the world for its breathtaking Underground river.
Baguio
Summer in the Philippines is almost synonymous with the word Baguio City. Baguio City is not just a word though; it's a city that is dubbed as the summer capital of the Philippines. The place is known for its cool climate along with great scenic views. The park within the city is quite a popular place as well. Baguio City is pretty jam-packed during the summer so if you want to visit the place, better plan it few months before the desired date in terms of accommodation and hotel reservations.

This is my recommended place to relax and spend some time during summer and holidays in the Philippines. Why? Aside from the great view and world class beaches this place can offer, it's quite not that overcrowded during the summer compared to the above 2 mentioned places. This place is perfect for surfing, diving and snorkeling. Accommodations and food in this place is pretty much affordable too.

Sabang Port
Buenavista View Deck
The road trip to Sabang Port will take you 2 hours, that’s if you're coming from Puerto Princesa's city proper. Generally, tour packages may vary (inclusive of free pick-up/drop-off, licensed tour guide and complimentary buffet lunch by Sabang Beach). But most excursions will make a quick stop by the Buenavista View Deck. You’ll be able to find a souvenir shop here, plus a nice view of the three remarkable islets: the Tres Marias.
Palawan's Subterranean River
The entire Underground River tour will last for more or less 45 minutes. But during the tour, you will be able to witness some of the most incredible rock formations. Different rocks may look like an image of a jellyfish, a certain vegetable, religious characters, mushrooms and many more. You'll be amazed as to how nature formed these rocks throughout the passing of time. Of course, allow your imagination to run wild while you’re at it.
Now, according to a 2010 study, the underground river (also known as St. Paul's Subterranean River National Park or St. Paul Underground River) also consists of a giant cave dome that measures 300 meters above the river. Other than that, the famous Philippine site also houses a range of large bats. With regards to this, it would be advisable to keep your mouth closed, especially when looking up, as bat droppings may fall unexpectedly. Besides these interesting sights, the river also has several river channels, marine creatures and more.
Coron town

If you're up for a little adventure, then brace yourself for a 700-step climb up Mt. Tapyas. It's best to go up these steps in the afternoon, so that you will be able to witness Coron's lovely sunset. You'll also be able to appreciate a 360° view of the entire island from this location.
Aside from those previously mentioned, you'll also be able to witness the Coron Cross, as soon as you reach the summit. The cross itself is brought to life with lights during the night.

Maquinit Hotsprings
To help ease your tired muscles after an exhausting climb, a relaxing dip by Maquinit Hotsprings is something that you should definitely experience. You’ll be able to encounter a short, bumpy ride along the way. But as soon as you see the hotsprings, you will surely forget how rocky the travel was. You will surely feel ignited with excitement.
Maquinit Hotsprings has an entrance fee (Php150 as of January 2012). But aside from that, the famous site also offers two pools -- both of which are composed of hot and saltwater. Moreover, you’ll be able to witness an interesting sight of rock formations within the pools. So be careful when stepping into the pool. Not only is the water hot, you may also slip or cut yourself from the jagged edges of the rock.
Furthermore, you can relax in Maquinit while staying soaked in the hot water. You can take photos, while viewing the vast ocean from the pool. Of course, there will always be a vast number of tourists enjoying the hotsprings. But rest assured that you will still have that peace and quiet while there.

1st Wonder: Kayangan Lake
Kayangan Lake is one of the many famous sites in Coron where you can have your picture taken with a mountain and a gorgeous blue sea as your background. The lake could be accessed through a short trek up a hill (as it's situated above sea level). It’s also been known for its nice mix of freshwater and saltwater.
2nd Wonder: Banol Beach
Your island hopping trip will not be complete without having lunch at Banol Beach. Most tours will offer this with buffet lunch in their package (usually includes rice, grilled fish and chicken, red crabs, seaweed with slices of tomatoes and onions). So after a hefty lunch, you can rest your tummy while basking under the sun or swimming by the beach.
3rd Wonder: Twin Lagoon
Another popular destination in Coron, the Twin Lagoon is known to be separated by a wall of rock formations. This remarkable site was also made famous by its way of entry. You can either glide or float through the narrow opening (the rock is about 5 inches from your face), or climb up an affixed deck of stairs (just on top of the opening). It’s an adventure on its own.

Fact Number 1 – The surroundings of the church is a home of several fortune tellers – Some people may think of their existence as an act against the church but for someone who would want to gain an experience about what most people think about their future, visiting the church site for site seeing and fortune telling sessions would be an additional experience that they could try.
Fact Number 2 – The Quiapo church have wondrous stories to tell – If the said church could only talk, it surely relay every experience that it was able to face for decades. Historians indicate that over the years, the church evolved from a typical looking “nipa and bamboo “shelter to a Mexican baroque edifice which experienced calamities such as fire, earthquakes and even being robbed.
Fact Number 3 - It is a home of Faith – Since it is known to be the home of the Miraculous Black Nazarene image. Each year, hundreds and even millions of Devotees coming from all parts of the country would gather on a procession to celebrate “The Black Nazarene’s Feast Day”. As per record, the said celebration is known to be one among the biggest celebrations that are commemorated by most devotees. People would normally attend a procession in honor of the image as it is believed to bring good luck and healing if one is able to get hold any part of the image.
Who would have thought that we have our own version of Niagara Falls right at the southeastern part of Mindanao? There lies Bislig City a.k.a The Booming City By The Bay. It faces the Philippine Sea and keeps the beautiful Tinuy-an Falls in Brgy. Burboanan. It is a cascading three falls and known to be the widest in the country. During the rainy season, its thick white waters curtain the stair-like stones where it flows.
A waterfall massage would be nice to have in this beautiful place; truly picturesque and one of its kind. Visitors are allowed to enjoy the magnificent flowing water up to the third level. They were able to set up a 97-steps stairs at the right side of the falls and no one is allowed to go up without a guide. For safety purposes, visitors are not allowed to position themselves near the cliff part. It would be advisable to bring waterproof cameras as well because the mist is too strong even if you’re meters away.
For those who will be visiting this place from Davao City, it is usually included in the Surigao tour packages that would take at least 6 hours of travel. Most of the visitors would leave downtown Davao at around midnight and get to witness this stunning view early in the morning. You can bring along food and just rent one of their cottages. Rates in the place are very cheap for something as awesome as this one.

Hubby and I travels a lot. He loves to take pictures of every places he visited and have them all stored in a hard drive. When we moved to US from Qatar, all the hard drives were packed in one of the foot lockers and I never had the chance to unpacked them. Last month, we moved from Oklahoma to Texas, and some of the stuff were still packed including the old photographs.
One of those pictures were our trip to Enchanted kingdom on our 2005 vacation to Philippines. That was hubby's second trip back home. Hubby loves to travel around the globe and Philippines is his favorite place to relax and unwind. In fact he is planning to retire there with me someday when all the kids are grown.
Enchanted Kingdom, located in Sta Rosa, Laguna, is the first and only world -class theme park in the Philippines that was opened to public in October 19, 1995 and now on its 17 years of giving the Filipino a fun place to spend the holidays and weekend. Right now it is the "Disneyland" of the Philippines. There is no comparison between the Disneyland and Enchanted Kingdom when it comes to size, fun rides, attractions and activities but at least the Philippines is proud to have something to offer to their people.
Here are some pictures taken from my sisters photo album during our 2010 visit to Enchanting Kingdom. You can see how everybody enjoyed the amusement park.
- Brooklyn Place- Take a journey down the street of Brooklyn, one of New York's five borough and reminisce the years of silent movies and slapstick comedies as entertainers parade down the cobblestone street.
- Portabello- The sights and sound of the Caribbean Atmosphere can be found in this zone. Rio Grande is the parks largest attraction were you can get wet and wild.
- Boulderville- Is inspired by the dinosaur era, this prehistoric cartoon zone will capture your kids imagination. Dinosaur mascot and puppet show entertains everyone who set foot in this zone .
- Victoria Park- This park is inspired by Queen Victoria era. Grand Carousel is the zones centerpiece attraction.The parks mascot,"Eldar the Wizard" is here for you to meet, greet and take photographs.
- Midway Boardwalk- Coney Island, "Americas Playground" in the 1930's comes to life in this zone. They have Anchors Away, which I don't recommend so much coz this is really too scary and breathe taking, Up Up and Away, Bump N' Splash and more.
- Jungle Outpost- This zone sets in the the heart of the Amazon in the jungle of Central America. The main attraction is the jungle log Jam and the Swan Lake.
- Spaceport- Here we can find the country's first and only triple loop coaster that turns riders upside down six times- 3 times forward and 3 times backward.

Qatar National Museum is biggest and most significant museum Doha, the Capital of Qatar . It is well known for its extensive collection of artifacts and relics on the religion of Islam. It is also a one stop shop for those who wish to explore the country’s geological history. This museum is currently closed due to construction of a new building. It should be finished in 2014.
The museum houses some interesting displays on the architecture styles of Qatar, medals and awards given to the nation by foreign leaders, descriptions on flora and fauna, a special section on oil and gas, a section on Bedouin tribesmen and much more.
6. Barzan Towers
Barzan Towers were originally built at the beginning of the 20th century as watch towers erected around the Umm Salal Mohammed area to protect the surrounding area from Ottomans that was already defeated but still lurked the land.
The corniche is a good place for jogging, family picnic and gathering with friends. Oryx, the giant statue of Orry, 15th Asian games mascot is one of its main attraction. Along the southern end of the Corniche is a large Oyster and Pearl statue, and a Water pots fountain adjacent to the Museum of Islamic Arts.

The Zoo may not match the Western Zoo in terms of quality and animals, but it is still a good place to visit if you have kids. The zoo is under renovation at the moment to make it a world wide tourist attraction and has a very long way to go to reach it objective but knowing Qatar and their money, this will happen. Doha Zoo has a good display of local desert animals and birds, making it a worthwhile 'first stop' for those going on desert safari. There are some native Qatari species, including Oryx and ostriches.

Nowadays Barzan Towers attract many visitors from nearby Doha and it is worth the trip even thought during renovation works interiors were equipped with air-conditioning that spoils authenticity of the towers.

Al-Shahaniya was founded on 27 December 1998, under the name Al-Nasr. At the beginning of its establishment, the club's headquarters were located in Al Jamilla, Doha.
